Hey there!  It's my first blog and wow... I just cant get over the fact that I'm actually doing this lol! Never have I been one to think others are very interested in what I have to say...ha ha.

The Holidays have been on my mind as they are coming whether we are ready or not. Seems every year it sneaks up on me. It's this time of year I LOVE to bake and cook. I enjoy cooking and such all outside of the holidays as well, but especially this time of year.

I'm a Starbucks Pumpkin Spice Latte junkie and look forward to hitting that place about twice a day during the season. Never to disappoint, unless there is a rude person at the drive thru. NEVER happens, have you noticed no Starbucks employee is ever rude? LOL! Must be because they are all jacked up on coffee and good benefits from what I hear.

Anyhow, I came across a recipe I thought you might wanna try:

Peanut Butter No Bake

These have been been done several times before me, but when I made these, I could not stay away from them. OMG! They were heavenly!! You HAVE to try my recipe! Let me know what you think ;-)

Prep Time: minutes
Cook Time: 5 minutes
Yield: 24 cookies unless you eat while spooning

 

Ingredients:

  • 2 cups sugar
  • 1/2 cup milk
  • pinch salt
  • 1 stick of butter
  • 1 cup peanut butter
  • 1 tsp. vanilla
  • 3 cups quick-cooking oatmeal

In large saucepan, combine sugar, milk, salt, and butter and mix well. Bring to a boil and cover saucepan for 30 seconds to allow steam to wash sugar crystals down sides of pan. Stir mixture and bring it to a boil that can't be stirred down for 1 minute. Then remove from heat and stir in peanut butter and vanilla until smooth. Add oatmeal and mix well. Do not use regular or instant oatmeal; quick-cooking oatmeal is essential to the success of this recipe.

Drop mixture by spoonfuls onto waxed paper or parchment lined baking sheets or Silpat sheets. Let cool until you can touch the mixture; then reshape the cookies to make them more a ball shape.

Let cool completely; store tightly covered at room temperature or my way is refrigerate, they are amazing that way!!!
