
Texas Driver Pulls a Smoker to Cook Brisket on the Road
Hey, we love our brisket here in Texas. The boys and I can sit around for hours discussing our techniques for getting that BBQ smoked just right. So when I saw the video at the bottom of this article, I was immediately intrigued. The footage opens with a close-up shot of a smoker in use as the smoke rises from the side compartment of the wood burning inside.

As the camera pulls back, we can see that this wasn't someone's backyard or even a parking lot. No, this bad boy his hooked up to a pickup truck and is being towed down the road as the meat cooks! I have questions. Was he late to the cook-off and decided to make up time by cooking on the road? Also, does this affect the flavor and/or the texture?

I guess technically, you could cook brisket this way if you kept the heat steady and the timing right. But doing it while driving? That’s risky. It’s not something pitmasters or police would recommend. After all, a smoker is designed to sit still, not bounce down the highway at 65 miles per hour.
Still, this story says a lot about how much Texans love their barbecue. We’ll go to great lengths for that perfect brisket, even if it means turning a road trip into a smoke session.
So is it safe? Probably not. Is it legal? Maybe. But is it peak Texas? Absolutely. And for barbecue fans, that might just be all that matters.
